Pomegranate Roasted Chicken with Sauce
 
 

Although finding fresh pomegranates throughout the year is becoming easier, regulations still hamper the importation of certain varieties having different flavors than those raised in the United States. This recipe calls for the use of MarXana Brand Foods pomegranate port wine reduction sauce. It adds a greater depth of flavor to a delicious dish.

Servings: 4
Ingredients:
1 ¼ cup extra virgin olive oil
1 chicken (3 ½ to 4 lbs.) quartered
1 tablespoon garlic, minced
¼ cup dry white wine or verjus ***
2 tablespoons MarXana Brand Foods pomegranate port reduction sauce ***
1 tablespoon lemon juice, fresh
½ teaspoon cinnamon powder
Salt and pepper to taste
Fresh pomegranate seeds (optional)

    1.    Preheat oven to 375 degrees.
    2.    Rinse quartered chicken under cool water and pat dry with a paper towel. Place the chicken in a shallow baking dish. Mix garlic, extra virgin olive oil, 1 tablespoon of pomegranate port reduction sauce, salt and pepper in a small bowl. Pour the mixture over the chicken pieces and with hands or brush coat all sides of the chicken.
    3.    Place the coated chicken in the oven for approximately 45 to 50 minutes or until the skin is lightly browned and the juices flow clear when the chicken thigh is pierced with a fork. Baste the chicken every ten to 15 minutes while cooking with the juices in the bottom of the baking dish.
    4.   Ten minutes before the completed chicken cooking time combine the remaining tablespoon of pomegranate port reduction sauce, wine and cinnamon in a small saucepan. Whisk the ingredients and slightly reduce the sauce. Add lemon juice and reduce again to the desired thickness. 
    5.   Plate the chicken and drizzle the pomegranate sauce on top (sprinkle with pomegranate seeds) and serve immediately.
     

 Cooking Tips
***Verjus is a green grape juice that is non-alcoholic. Usually used as a substitute for wine, lemon, or to add a slight acidic or tartness to a dish.
