Here's to a healthy breakfast with the sweet tart taste of pomegranate seeds and pomegranate reduction sauce. The clean fresh flavor of pomegranate arils bursting in the mouth with yogurt and cottage cheese (regular, low-fat, or non-fat) makes a delicious snack or special treat any time of day.
Servings: 1
Ingredients:
2 tbs yogurt (regular, lowfat, or nonfat)***
2 tbs cottage cheese (regular, lowfat, or nonfat)
1/2 fresh pomegranate, arils removed and reserved, all else discarded
1 tbs pomegranate reduction sauce***
Cooking Tips
*** You can find pomegranate arils already packaged in the refrigerator section of some grocery stores. If you buy a fresh pomegranate, cut it in half to use and refrigerate the other half. They will last several days once cut. They are easy to peel under cool running water. Use your fingers to pop out the arils into a sieve. Rinse and they are ready to serve.
***We have found vanilla yogurt a delicious substitute for plain yogurt.
***This and similar items can be found at clubsauce.com. Consider using blueberry merlot, black currant cabernet, tart cherry syrah, or pomegranate port as additional compliments to this dish. (The alcohol has been cooked out during the reduction process)
