

Sautee chicken breasts encrusted with pistachio nuts and splashed with the sweet-tart flavor of pomegranate sauce. It's a delicious dish any time of year and especially colorful for the holidays. Use chilled leftovers for sandwiches the following day as an added lunchtime treat.

Ingredients:
3/4 cup roasted pistachio nuts
1/2 cup flour
1 egg, beaten
4 chicken breasts, boneless, skinless
3 tbs +1 tsp extra virgin olive oil
1/4 cup dry white wine
1 shallot, chopped
1 tbs chicken stock (More Than Gourmet roasted chicken stock)***
2 cups hot water
2 tbs pomegranate port reduction sauce (MarXana Brand Foods)***
1/4 tsp fresh ground black pepper
1/4 cup pomegranate arils (optional)
- Finely crush 1/2 cup pistachio nuts and combine with flour in a large bowl until well blended. Chop remaining pistachio nuts and set aside for garnishing at serving time.
- Place individual chicken breasts between two sheets of plastic wrap and pound flat to approximately 1/4 inch thick with a mallet, or rolling pin.
- Heat 3 tablespoons oil in skillet or pan large enough to hold at least 2 breasts over a medium-high heat.
- Dip pounded chicken breasts into egg then into pistachio flour mixture. Lightly shake off excess and place in the pan. Cook approximately 3 minutes per side or until cooked through and browned on the outside. Remove breasts and do the same with the remaining chicken breasts. Place cooked pieces on a paper towel lined dish and cover.
- In a small saucepan heat remaining teaspoon oil over medium heat and add shallots. Cook for one minute then add wine. Reduce by half then add water, chicken stock and pomegranate port reduction sauce. Season the sauce with pepper to taste and continue to reduce to desired thickness.
- Plate chicken breasts and finish each with a small amount of sauce and serve. Sprinkle with pomegranate arils and remaining chopped pistachio nuts and serve.

***Verjus is a green grape juice that is non-alcoholic. Usually used as a substitute for wine, lemon, or to add a slight acidic or tartness to a dish.
