How to Prepare, Use and Store Dried Wild Mushrooms

(Keep in mind the flavor of the mushrooms and the liquids they are soaked in are more concentrated so fewer mushrooms are needed for cooking than when you use fresh mushrooms. A basic conversion guide: 1 dry ounce of mushrooms is equal to 7 to 10 ounces when reconstituted.)

How to Prepare and Use Dried Mushrooms:

  1. Always rinse mushrooms before soaking to remove any unwanted grit or dust.
  2. Briefly boil enough red or white wine, water, or stock to cover the mushrooms and remove from heat.
  3. Add rinsed mushrooms and soak for about 25 to 30 minutes as the liquid cools.
  4. Remove the mushrooms and squeeze out any excess liquid.
  5. Pour the liquid through a fine sieve and reserve.
  6. The liquid can then be used in rice and pasta dishes, soups, gravies and sauces.
  7. The liquid can also be put into ice cube trays and frozen for future use.

How to Store Dried Mushrooms:

  1. Dried mushrooms should be stored in dry airtight containers.
  2. You can store and use dried mushrooms in various ways. They can be whole, kibbled (the same as diced) or powdered.
  3. To create a powder, grind the dried mushrooms in a coffee grinder or spice mill.
  4. Use the mushroom powder when you want to impart a rich mushroom flavor without the pieces. Use it with flour when making your own pasta, or as a flavoring agent in sauces, soups, or stews.
