Wild Mushroom Sauce
 
  Adapted from More Than Gourmet
 
If you love mushrooms you will love this sauce. Use it as a tasty addition to jazz up rice, potatoes, and pasta dishes, drizzled over vegetables or as an outstanding sauce for various cuts of grilled or roasted meats and poultry.
Servings: 4
Ingredients: 
2 oz butter
2 tbs shallots, minced
4oz dried wild mushrooms mix, reconstituted in warm water enough to cover.***
1 cup red wine
11/2 oz Veggie-Glace Gold® (More Than Gourmet veggie demi-glace)***
1/4 cup heavy cream
salt and freshly ground pepper

    1. Place dried mushrooms in bowl with warm water to cover for 20 minutes. Drain, strain and reserve liquid. Pat mushrooms dry.
    2. Sauté shallots in butter for 1–2 minutes or until translucent.
    3. Add mushrooms and cook until tender. Remove mushrooms and set aside.
    4. Add red wine and reduce by half. Add Veggie-Glace Gold® and whisk until dissolved.
    5. Return mushrooms to pan and add cream. Reduce briefly and then add enough strained through a sieve reserved liquid from mushrooms to reach desired sauce thickness.
    6. Add salt and pepper to taste and serve.
