Wild Game Sausage on Cheesy Grits with Maple-Chipotle Chili Sauce

Select your favorite wild game sausage for this delicious recipe. If you have never tried wild game sausages we suggest using wild boar, duck, rabbit, chicken or even traditional pork sausages will do. Mound them atop cheesy grits with this zesty sauce and we are sure you will be back for more!
Servings: 4
Ingredients:
4 cup water
1 tsp salt
1 cup quick-Cook Grits
freshly ground black pepper to taste
6 oz grated Asiago cheese
8 wild boar or other game sausages
2 tbs canned Chipotle Chili Sauce (available in most supermarkets in the Hispanic section)
1/4 cup pure maple syrup
1 1/2 oz Glace de Viande Gold® (Brown Stock) ***
1. Bring water to a boil in a medium saucepan. Add salt, then slowly pour in grits, stirring constantly. Cover, adjust heat to low, and cook until soft, about 20 minutes, stirring occasionally.
2. When cooked, season with pepper and stir in cheese.
3. While grits cook, grill or sauté sausages until browned and cooked through.
4. Combine chipotle chili sauce, maple syrup, and Glace de Viande Gold® in a small saucepan and heat until hot and the ingredients have blended together.
5. Spoon grits onto a platter or divide among 4 dinner plates. Add sausages and spoon on sauce. Pass extra sauce at table.
