This veal glace (veal stock reduction) is made from a delicate combination of veal bones and other natural ingredients, then cooked for hours until it has reached the peak of perfection.

More Than Gourmet has taken the time to create extraordinary stocks and demi-glace in the classic old-fashioned way. They use traditional methods that many professional chefs and home cooks would rather avoid due to the tedious time, preparation and cost.

Here the bones are roasted and slow cooked with other natural ingredients for long hours so that you can create recipes that you would not have considered in the past. You can store the veal stock reduction in your pantry for up to 18 months and once opened it can be stored in the refrigerator for up to one year.

Ingredients:

Veal stock (veal bones, water), dried beef stock, tomato paste, beef stock, salt, Mirepoix stock (carrot, celery, and onion stocks), caramel color, carrot stock, celery stock. Product contains a trace amount of soybeans as an emulsifier. (>1 ppm)

How to Use:

This veal glace is used to make lighter meat flavored soups, stews, pasta dishes and sauces. You'll find the veal glace is a reduction that's easy to work with and comes ready for use. Just reconstitute as per the desired strength below and add it to your favorite recipe calling for veal stock or glace.

It can be used full strength or add up to 3 parts hot water for a classic glace de Veau (veal glace). For veal stock increase the water by as much as 20 to 1 depending on the desired strength.

Additional Suggestion:

By using a variety of wines you can create more robust and more aromatic sauces with lighter, sweeter notes. Wines to consider would include merlot, Marsala, and Madeira wines.
