Fennel is a savory seed that produces an almost sweet anise like flavoring. It grows wild and is hand harvested and packed on the small island of Sardinia. It truly is one of my favorite seasonings. The De Col Piras family of Sardinia uses special care and a natural drying process to retain the freshness and quality of these delicious seeds.

How to Use: The Italians like to use them quite often in breads, pizza, stuffing, cakes and especially as a flavoring in sausage. My little secret is to use fennel seeds in tomato type sauces or stews. It only takes a few seeds to add a slight sweetness to the sauce instead of using sugar to cut the acidity sometimes found in tomatoes.
